In Tyachiv district, in the village of Lopukhiv (former name – Brustury) there was a festival. This year’s, the third consecutive festival "Brustury kedrovytsya" was combined with the Day of the village and its 375th anniversary. The anniversary of Lopukhiv was celebrated with the procession through the village. And it was symbolic. The day before, they sewed the largest Ukrainian flag in the district – 20 to 6 meters. The residents and visitors of Lopukhiv carried it from the village council to the House of Culture, where the celebration was held.
The gastronomic festival, in addition to kedrovytsya, mentioned in the title of the holiday, promotes traditional Lopukhiv dishes such as roast.
Local hostess Halyna Pavlyuk shared its recipe with uzhgorod.in. Brustury style roast in made of smoked pork. One part of it is boiled in water to make a soup. Then, they add to it the flour, roasted in lukewarm water. After that, they also add garlic, pepper, butter and sour cream. Sour cream, Mrs. Halyna says, has to be homemade because one from the store will spoil the dish. The rest of the meat, cut into small pieces, is fried in the fat with onion, salt, pepper, Vegeta, marjoram, ginger. All this is also added to the previously prepared broth.
For the village holiday, Mrs. Halyna cooked 40 liters of roast.
Housewives learned to cook roast both of pork and a lean one – of mushrooms (both fresh and dried will do). Roast is eaten with bread or potatoes.
During the festival, they consumed roast with kedrovytsya. The tincture of pine cones can be tasted only during the holiday. It is made by the village head according to the old family recipe. This drink can not be bought at the festival, they treat the holiday guests for free and in limited doses. Mykhailo Fitsay claims that kedrovytsya has medicinal properties only when consumed in limited quantities. The next year, they will again prepare to welcome guests – with kedrovytsya and roast.
