Transcarpathian delicacies: snail salami and snail liquor

Snails on the Transcarpathian table have become as common as in France!  While at first only the bravest dared to try the snail meat, now all local smart set go to the snail races, and the most well-off gourmets once in a while indulge themselves with snail caviar.

But a true Transcarpathian table cannot go without sausage and liquor. 

And for the first time in Transcarpathian region and in Ukraine, the eco-farm "RAKO" (the village of Rakovo, Perechyn district) presented the snail meat sausage (snail salami with spices). Those, who have already tasted it, have quite positive impressions, for example, Natalie Shtal: "Snail sausage? Have you tried it? I have tried snails, but it was the first time I tried the sausage made of them! Lamb instestines, garlic, pepper, salt. The usual taste, unusual texture. Amazing!"

And Andriy Hanusych tried another novelty, a liquor "Chiga-biga", presented for the first time: "Snail-infused liquor, from shells, with snail sausage?.. Of course I’ll have it!"
